5 Delicious Chicken Breast Recipes
If you think about it, it’s incredible how many different ways there are to cook chicken! It’s the perfect protein to add into so many different recipes. Plus chicken is one of the healthier meat proteins and is usually very mild on the stomach. No wonder it’s one of our favorite proteins!
Knowing how to properly prepare chicken makes all the difference, and will help you obtain the right balance of healthy and delicious.
Today, we are sharing 5 delicious and healthy chicken breast recipes that you can easily prepare at home for lunch, dinner and even breakfast. They’re perfect both to meal prep and for a date night.
No matter what you like or what your goal is, there will be some yummy recipes on here for you!
Note: We always use chicken breasts when preparing these recipes, due to the lower fat content, but you can use whichever part of the chicken you prefer.
While you might think of chicken breast as bland or boring, give these recipes a try and you’ll find a new appreciation for poultry!
Easy Chicken Breast Recipes Ideas
Piri Piri Chicken
Meal Prep Time: 30 min
This recipe has Portuguese and Mozambique origins, and is known for the spicy kick that comes from the piri piri chilli peppers.
In a medium bowl, whisk together olive oil, red wine vinegar, chopped fresh garlic, lemon juice, salt, black pepper, paprika, and dried or fresh chilies. I don’t really use set proportions, but add the salt last and taste the mix to make sure the flavor isn’t overwhelming.
Toss the chicken breasts in the mixture and marinate them for at least an hour.
Preheat a large skillet to medium, add olive oil, and then add the marinated chicken breast. Cook the first side until golden on the bottom (About 3-4 minutes), then flip to the other side and repeat. Flip it several more times and continue to cook until the chicken is done. You can always cut it open to check if the center is cooked.
Lemon, Herbs and Pepper Chicken
Meal Prep Time: 40 min
In a medium bowl, whisk together lemon juice, black pepper and salt. Toss the chicken breasts in the mixture until fully coated.
You can cook the chicken in a stovetop or in the oven. In a large ovenproof skillet over medium heat, heat oil. Add the chicken breast (already fully coated with the mixture) and cook until golden on bottom (about 3-4 minutes), then flip chicken breasts.
Repeat until the chicken is cooked through. You can also preheat your oven to 325 degrees F and cook the chicken for about 20 minutes. Cover the pan in aluminum foil to keep the chicken from drying out.
Once cooked, garnish with parsley and fresh herbs. Slice a jalapeno and a lemon into thin rounds and put it on top to finish! This is a simple recipe, but it looks and tastes impressive.
Chicken Breasts with chorizo and potatoes
Meal Prep Time: 45 min
Start by washing some potatoes and cutting them into one inch portions. In a medium baking pan, cover the potatoes with a light drizzle of olive oil, salt, and pepper. Roast the potatoes in the oven, about 10-15 minutes at 300 F.
Meanwhile, place a small skillet over medium heat on the stovetop. Add some olive oil, then place your chicken breasts in. Add some salt and black pepper, and cook until golden on the bottom (about 5 minutes).
Next, remove the pan with the potatoes from the oven. Transfer the chicken from the skillet to the pan, placing the uncooked side down. Add some cut chorizo pieces to the pan, and pour any juice from the chicken skillet onto the mixture. Return the pan to the oven for about 15-20 more minutes, until the chicken is cooked through.
Alternatively you can cut the chicken breasts into small pieces and cook them in the skillet along the chorizo. Then, transfer them to the oven alongside the potatoes. You can also add other ingredients to the mix like some small tomatoes and some herbs.
Jerk Chicken Breasts
Meal Prep Time: 45 min
This recipe has Jamican origins! You can easily find pre-made dry Jerk seasoning, which is great if you're running short on time, but I strongly recommend prepping your own to marinate the chicken breast.
For the jerk seasoning, take a medium bowl and whisk together all the dried ingredients :1 teaspoons of salt, 2 teaspoons of ground black pepper, 2 teaspoons of cayenne pepper, 2 teaspoons of ground thyme, 2 teaspoons of brown sugar, 1 teaspoon of ground cumin, 1 teaspoon of parsley, 1 teaspoon paprika, 1/2 teaspoon of hot pepper flakes, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, 1/2 teaspoon of ground clove and some chopped scallions.
For a “true” jerk seasoning, find some fresh Scotch Bonnet peppers, chops them finely, and add them to your mixture. These might be difficult to find (I think they are seasonal) but your best bet is to go to a local health foods store or organic farmer‘s market.
Next, coat your chicken breasts with lime and lemon juice, then toss them in the dry mixture. You can use your hands to make sure the chickens are evenly coated, and you can also take a knife and make some shallow cuts into the surface of the breasts to ensure the flavor is spread through.
Either cook your chicken on the stovetop using medium heat, flipping several times, or cook in the oven at 325 F for 20 minutes, covered in aluminum foil.
Creamy Herb Chicken
Meal Prep Time: 30 min
Prepare a sauce using chopped garlic, parsley, salt, black pepper, 1 cup milk or half and half, and 1 teaspoon corn starch (optional, to thicken the sauce). You can also use some mushrooms for extra protein.
Heat a skillet pan on the stovetop to medium heat. Add olive oil, and cook your chicken breasts almost fully through (about 4 minutes per side). Next, add a bit more olive oil and pour the cream mixture into the skillet. Bring the mixture up to a boil, then reduce the heat and cook until the sauce thickens. You can flip the chicken breasts to coat them fully in the sauce while it cooks. Add some extra fresh herbs before serving!
How to meal prep chicken breasts
If you love these delicious chicken recipes, meal prepping is a great way to keep enjoying them through the week without worrying about cooking every day. This can definitely be a lifesaver when you are in a rush to get to work but still want to enjoy a healthy lunch, or when you come back home after a long day and don’t feel like cooking. Plus, it’s a great way to save money and still eat healthy and enjoyable meals!
Meal prepping is super easy! I normally do it on Sunday afternoons, cooking enough for 3 or 4 days. Store the chicken breasts in a glass container in the fridge, then just heat up when you’re ready to eat!
When meal prepping chicken, it’s usually easier to cook it in the oven instead of the stovetop. That way, you can just put all of the breasts on one pan, cover with aluminum foil, and cook it all at once. Much easier than flipping 10 pieces multiple times!
My personal favorite recipes for meal prep are the Piri Piri Chicken and the Lemon, Herbs and Pepper Chicken, but I rotate through all of these recipes!
Don’t forget that although chicken breast is a super lean and healthy protein, for a truly complete healthy meal you’ll want to add some vegetables, avocado, quinoa, or other healthy ingredients for the right balance of nutrients and calories!
My ideal lunch, especially for those intense workout days, includes Chicken Breast with some roasted vegetables, half a cup of quinoa, and half an avocado. It’s a great mix of protein, carbs, and healthy fats, which is exactly what your body needs!
